In short: start with the manufacturer interval, record equipment condition and shorten the interval if dirt or ice builds up before the next check.
Grease, road dust, construction work and poor ventilation increase fouling. In freezers, also monitor frame ice, drain freezing and rapid frost return.
A useful log states date, equipment, task, observed condition, corrective action and person responsible. Photos help when damage or leakage is visible.
Logs support diagnosis, HACCP and warranty evidence, but a blank template does not itself prove compliance.
Adjusting the condenser interval to your environment
The monthly condenser interval assumes a clean indoor location. Dirtier environments shorten it sharply:
| Environment | Condenser-cleaning interval |
|---|---|
| Clean indoor / air-conditioned space | Monthly |
| Industrial kitchen (grease-laden air) | Every 2 weeks |
| Outdoor, dusty, or near a road/construction site | Weekly |
Freezer rooms: gaskets and drains
Freezer rooms demand closer attention to gasket and drain condition. Residual moisture freezes, so gaskets must be dried completely and drains kept clear to prevent ice that jams the door or blocks the defrost path.
Logging and records
Keep a simple maintenance log — paper or digital. Recording the daily temperature and each completed task does three things:
- It satisfies HACCP / food-safety auditors.
- It reveals slow trends — a gradually climbing temperature points to a fouling condenser before it becomes a failure.
- It provides the service history that protects any warranty claim.
You do not need to invent the forms: the Frostbox HACCP annex to the Algor manual contains a ready-to-print cleaning, disinfection and defrosting register alongside the monthly temperature control sheet — download the documents.
